Fava Beans and Pasta


 

Ingredients:


1 pound frozen Fava beans

½ onion, chopped

2 heaping tsp chopped garlic

2 cups chicken broth

4-7 cups water

Thin Spaghetti or Angel Hair pasta (You will only use a handful)

Pecorino Romano cheese

Extra Virgin olive oil

Salt & Pepper to taste


Preparation:


Cover bottom of pan with olive oil, sauté onions until translucent, add garlic and continue to sauté, making sure not to burn garlic. When the onions and garlic are ready add the chicken broth and 4 cups water, raise the heat to a boil then lower and simmer until the fava beans are tender, about 30 minutes. You may need to add an addition 2-3 cups water during the cooking process. Add a few handful of pasta, breaking it up into 3 or 4 pieces, continue cooking until pasta is al dente, about 6-7 minutes or by package directions. Salt and pepper to taste. Serve with a generous amount of grated Pecorino Romano cheese.


For an added twist, serve with a few slices of fully cooked Italian Sausage.
